Baking The Best Molten Lava Cheese Tarts @ Village Grocer

I’m a huge fan of pastries and loved to learn how to make it. Last weekend, I was given the opportunity to learn how to bake Cheese Tarts from the experience and popular Chef May Foo in Village Grocer, SS15 Courtyard. The event organized by New Zealand trade is to create more awareness about New Zealand products as well as introducing the latest molten flavours Cheese Tart in Village Grocer.

Chef Foo was inspired to create her very own petite version of fluffy and creamy cheese tart as Malaysian has developed a fond liking for the delectable pastry. Her version is made using premium dairy New Zealand produce such as Anchor butter, cream and cream cheese.

Baked fresh daily, these tasty cheesy tarts can be served either warm, chilled or frozen. It’s available in four new flavours such as Original, Golden Lava (salted egg yolk), Matcha and Tiramisu. I had the chance to try the Original and Matcha tart during the event. Got to say, it was one of the best molten lava tart I’ve ever eaten.

Back to the baking part, today we’re learning to bake several cheese tarts using New Zealand produce like Anchor butter, cream and cream cheese.  There’s also a surprise in store as Chef May Foo will demonstrate two additional tart’s recipes using Whittaker’s chocolates, pic’s peanut butter and jazz apples.

Matcha Lava Cheese Tarts: (Yield 20 mini tartlets)

Ingredients:

Butter Base (Tart Shell):

  • Anchor unsalted butter (150g)  + icing sugar (50g)
  • Egg (Grade A – 1)
  • All purpose flour (300 g) + Salt (2g)

Matcha Lava Cheese:

  • Anchor cream cheese (softened, 250g) + Anchor unsalted butter (50g)
  • Anchor whipping cream (250g) + UHT Milk (100g)
  • Sugar (125g)
  • Premium Matcha Powder (15g) + Custard Powder (15g)
  • Egg (Grade A – 1)

Finishing Matcha Lava (After Baked):

  • Snow powder / Matcha powder (As neccessary)
  • Adzuki Beans (Optional)

Butter Base:

  1. Combine butter & icing sugar. Mix well.
  2. Add in egg. Mix in dry ingredient till form dough
  3. Rest in the chiller for 30 minutes before rolling onto the tartlets mould.
  4. Roll the dough to 2mm thickness and fully bake the tart shells at 180C for 13- 15 minutes
  5. Place some Adzuki beans on the base of the baked shells.

Matcha Lava Cheese:

  1. Combine cream cheese, butter, whipping cream, milk and sugar. Dissolve under hot water bath till mixture is smooth.
  2. Remove from the water bath; add in custard powder, matcha powder and egg. Stir till slightly thicken
  3. Keep lava filling chilled for 1 hour. Pire filling into the fully baked tart shells.
  4. Allow to set till firm in freezer for at least 2 hours.
  5. Bake in preheated oven at 230C for 7-8 minutes till the top is slightly golden brown.
  6. Before serving, dust with snow and matcha powder. Garnish with Adzuki beans as desired.

Pic’s Nutty Whittakers Tarts: (Yield 20 mini tartlets)

Ingredients:

Butter Base (Tart Shell):

  • Anchor unsalted butter (150g)  + icing sugar (50g)
  • Egg (Grade A – 1)
  • All purpose flour (300 g) + Salt (2g)

Pic’s Nutty Whittakers Filling:

  • Anchor whipping cream (200g)
  • Whitakkers Dark Chocolate (50% , 200g)
  • Anchor unsalted butter (20g)  + sea salt (a pinch)

Topping:

  • Pic’s crunchy peanut butter (Salted) – (As necessary)

Butter Base:

  1. Combine butter & icing sugar. Mix well.
  2. Add in egg. Mix in dry ingredient till form dough
  3. Rest in the chiller for 30 minutes before rolling onto the tartlets mould.
  4. Roll the dough to 2mm thickness and fully bake the tart shells at 180C for 13- 15 minutes

Pic’s Nutty Whittakers Filling:

  1. Combine cream, chocolate, butter and a pinch of salt in the microwave. Still till smooth.
  2. Pipe some Pic’s peanut butter onto the coated tartlets shell.

Assemble:

  1. Fill the remaining shell with Whittakers Dark Chocolate Filling.
  2. Allow the tarts to set in the chiller for 1 hour. Garnish with some Pic’s peanut butter on the surface before serving.

The petite tarts range from RM3.50 per piece but good news for cheese tart lovers –  As part of the special launch, get 1 free tart for every 5 tarts purchased. That means a box of 6 tarts cost only RM15. (which is really quite a bargain).
