I’ve always loved Italian food for their rich flavors and strong cultural heritage. Thus, I’m stoked to be invited to the grand re-launch of Graze, Hilton Kuala Lumpur – an authentic Italian restaurant helmed by the talented Chef Nicola Affatati. Inspired by the rich and diverse tapestry of Italian cuisine, Chef Nicola brings a wealth of experience and a deep passion for the culinary arts to this exciting gastronomic venture.
The Italian Experience with Chef Nicola Affatati
Before the start for the dining session, we were given the opportunity to watched live demonstrations of barista mix and handmade pasta. Here, we listened as Chef Nicola Affatati shared his beautiful journey. Inspired from his childhood memories of cooking alongside his great grandmother, Chef Nicola Affatati from Puglia has embarked on a culinary journey that celebrates the heart of Southern Italian cuisine. Influenced by his roots, Chef Nicola’s passion for creating handmade pasta, including delectable varieties like Cavatelli and Orecchiette, stands as a tribute to the time-honored traditions handed down through generations. What sets Chef Nicola apart is his boundless creativity, elevating these time-honored classics to new heights of flavor and presentation.

Burrata
At first glance, I thought we were served with a perfectly poached egg as the centerpiece. To my surprise, it was actually Burrata Cheese. The creamy rich fresh flavor of the Burrata Cheese is so good. Paired with Beef Bresaola and Mesclun salad lightly sprinkle with salt, was absolutely gorgeous! This is a true Italian classic reimagined with Chef Nicola’s signature touch.
Polpette
This is another classic comfort dish that’s served in many Italian restaurant. Here, we savored the juicy and bouncy Beef-Lamb meatballs that’s accompanied with rich Tomato Basil sauce.
Primi – Cavatelli Fruitti Di Mare
This is the highlight of the night as Handmade Cavatelli takes center stage in this seafood sensation. The al-dente Cavatelli was firm and and has absorbed the rich seafood taste of the fresh Prawn Bisque and Shellfish. Each bite was a delight to have!
Secondi – Merluzzo in Padella
I always feared ordering fish for dinner as I’m ultra sensitive to muddy (aka fishy scent). To my delight, the fresh Atlantic Cod with Potato Cream paired with Bell Pepper and Oregano-Capers Oil is truly delicious. The symphony of flavors coupled with layering of textures certainly amplifies the sensation of Italian culinary artistry.
Dolci- Cannoli Crema Passticciera
The night must always end with dessert (that’s me :P). We conclude our Italian feast with Homemade Cannoli filled with delectable Crema Pasticciera. A creamy sweet ending that leaves me asking for more.
